Bengan Ka Bhurta

A summer lunch treat which is easy to make and carries a distinctive Punjabi taste. Egg plants are first roasted in clay oven or at home over a fierce gas or charcoal fire. Egg plants (Baingan) with red onions, potato, green chili and tomatoes mixed regional spices cooked till perfection. Try it mixing with fresh yogurt and have it with Tandoori Roti.
