Hi, whenever I grill seekh kababs or fish they seem to break very easily,what can i do to prevent that from happening. thanks

Answer :

The binding of the Kababs depends on few things. 1) Meat should be fine minced. 2) Lean meat has less fat and will not let Kababs bind therefore you need to buy ground meat that has minimum 30% fat. 3) When you add spices and onions to the minced meat, mix it really well with your hands. This will also help to bind the minced meat. 4) When you are molding Kabab on the skewer (Seekh) press firmly all around with wet hands.
