Article Description : All preserves should be store into clean and sterilized containers. To sterilize jars and bottles, First of all wash them in really hot soapy water and then rinse them thoroughly with hot water. Place the jar on the oven tray and dry in warm oven 300?F., 150?C., Gas Mark 2, for 45 minutes. While you are preparing preserve, stand the jar upside down on a clean tea towel. Some times when you pour the hot jam into the jar, they can crack. Always pour the jam into the bottles while they are warm. Fill the jars almost to the top. If potting jam, jelly, marmalade, sherbets or conserve, cover the container with a waxed disc while the preserve is piping hot. Otherwise cool the preserve completely and then seal them with a dampened clear disc secured with an elastic band. Do not seal the preserve when it is warm, mold will grow on the surface. Chutney and pickles (achar) are covered in the same way. For long term storage, cover the jar with a screw top as well.
